A BBQ rub is a dry blend of spices, herbs, salt, and often sugar that is applied directly to the surface of meat before cooking. The rub creates a flavorful crust - called the bark - as the sugars caramelize and the proteins on the meat's surface react with heat. Salt in the rub also draws moisture to the surface and back in, acting as a dry brine that seasons the meat deeper than the outer layer alone.
Both approaches work, but for the best results, apply the rub at least 30 to 60 minutes before cooking to allow the salt to begin drawing moisture and penetrating the meat. For large cuts like brisket, pork butt, or whole chickens, overnight resting in the refrigerator after applying the rub produces noticeably deeper flavor and better bark formation. If cooking immediately, pat the rub firmly onto the surface so it adheres rather than falling off on the grate.
A general guideline is enough rub to coat all surfaces with a visible, even layer - similar to the coverage you would apply with seasoning salt. For thick cuts like brisket or ribs, a more generous application is appropriate because only the outer inch or so of the meat will absorb the flavor. Lean, thin cuts like chicken breasts or fish need a lighter hand to avoid overpowering the protein's natural flavor.
Both have their place. Store-bought rubs from reputable competition BBQ brands are carefully balanced and convenient, especially for cuts where dialing in the right salt-to-spice ratio matters. Making your own rub gives you complete control over sodium levels, heat, and sweetness, which is valuable if you are cooking for guests with dietary restrictions or if you have a signature flavor profile you are trying to achieve. Many experienced pitmasters use commercial rubs as a base and customize from there.
Most basic rubs made from spices, salt, sugar, and dried herbs are naturally gluten-free, but cross-contamination during manufacturing is a real concern, and some blends include fillers or anti-caking agents that may contain gluten. Always check the label for a certified gluten-free designation if you are cooking for someone with celiac disease or gluten sensitivity. When in doubt, contact the manufacturer directly before use.
