Cast iron is the popular pick because it is heavy and holds heat, so it presses and sears at the same time, which is ideal for smash burgers and bacon. Stainless presses are lighter and easier to clean and still flatten food well. If searing power is the goal, go cast iron; if low maintenance matters most, stainless is a fine choice.
Get the surface screaming hot, drop a loose ball of beef, and press it thin and flat for about ten seconds within the first minute of cooking, before the crust sets.
