To cook Wagyu steak, match your method to the thickness of the cut and pull it by internal temperature, because Wagyu fat starts melting at a lower temperature than the fat in conventional beef and can render out before you expect it. Pan sear it, grill it, or reverse sear it over controlled heat. Pull it about 5°F below your preferred final temperature, then rest it before slicing. We take Wagyu to about 120°F to 125°F, where the marbling has softened but is still inside the meat. USDA food-safety guidance for beef steak is 145°F, followed by a three-minute rest.

Why Wagyu Needs Controlled Heat and the Right Method

Wagyu has more fat inside the muscle itself (intramuscular fat, or marbling) than conventional beef, and that fat starts to melt at a lower temperature than the fat in conventional beef. The USDA defines marbling as fat dispersed within muscle and says more of it makes a steak more tender, juicier and more flavorful. This is exactly why you shouldn't treat a cut of Wagyu like a grocery store steak when it comes to the cook. Hold it on the heat too long and too much of that fat renders out, which leaves the steak greasy instead of rich. The change happens faster than you expect.

You'll see two products sold as Wagyu, and the difference changes how you cook them.

Japanese A5 (the top grade in Japan's beef grading system) is the most heavily marbled beef you can buy, and it usually arrives cut thin, from half an inch to one inch.

American Wagyu (Wagyu cattle raised in the United States, either fullblood or crossed with domestic breeds) varies more. Fullblood herds can produce beef close to A5. Crossbred cattle produce beef above USDA Prime but short of A5. Either way, it's usually sold thicker, from 1.25 inches up.

Measure the steak in front of you instead of trusting the label, because you choose your method from the thickness.

At half an inch to one inch, which covers most A5, the steak cooks fast, so use a pan sear or a short grill sear and stay with it. At 1.25 to 1.5 inches, you have time to brown the surface without pushing the center past your target. At 1.75 inches or thicker, use a reverse sear (low heat first to bring the center up slowly, then a brief sear at the end for the crust).. Published cook times assume an oven, pan or grill that behaves like the one in the test kitchen. You can't cook a Wagyu steak on a timer, or you'll ruin it.

Keep fresh beef refrigerated until you're ready to cook. Set the steak out while you preheat the pan or grill. Season it lightly. Wagyu doesn't need a heavy spice rub, since for most A5 cuts a little salt is all it takes. If you want more seasoning, apply one of our steak rubs lightly. Have tongs and an instant-read thermometer or probe thermometer ready before you start. If you stop to hunt for your tongs or thermometer, the internal temperature will climb past your target while you're looking for them.

  1. Preheat the pan or grill fully before the steak goes on, so the cooking surface doesn't lose heat the moment you add the meat.

  2. Cook by the method that matches your thickness. Put A5 from half an inch to one inch directly in cast iron or over the grill's searing zone. Sear a 1.25- to 1.5-inch steak over direct heat. Start a steak 1.75 inches or thicker with a reverse sear over low heat.

  3. On a grill, rendered fat can ignite and send up a sudden burst of flame (a flare-up). Move the steak away from the direct flame until the fire settles.

  4. Check the internal temperature at the thickest part of the steak near the end of cooking, since that part is the last to come up to temperature.

  5. Pull the steak about 5°F below your final target. After you take it off the heat, the internal temperature keeps climbing for a few minutes (carryover cooking).

Don't confuse a hard sear with prolonged aggressive heat. We use high heat briefly for browning, then stop or move to gentler heat. Higher cooking temperatures generally produce more moisture loss. If you're grilling, our medium-rare steak timing guide gives you rough timings to plan around.


Target Temperatures, Carryover Cooking, and Resting

The method changes how the steak gets hot. It doesn't change the temperatures you're aiming for, so those are the same whether you seared it in a pan or reverse seared it.


Use temperature as the decision point, not the surface color. A food thermometer is the only reliable way to verify safe internal temperature, and USDA guidance says to check near the end of cooking in the thickest part, away from bone, fat, or gristle. For pan searing, an instant-read thermometer works well between flips. For a reverse sear, a probe lets you follow the low-heat phase without guessing.

We aim lower than the federal minimum because of what happens to the fat. At 120°F to 125°F, the marbling has melted just enough to soften the meat, and most of it is still in the steak. By 145°F, a good deal of that fat has rendered out and ended up on the board instead. For the full reasoning, use our Wagyu temperature guide. USDA food-safety guidance calls for beef steak to reach 145°F followed by a rest of at least three minutes. If you want the federal standard, cook to 145°F.


Once you take the steak off the heat, set it on a clean surface and leave it whole while the internal temperature finishes climbing. A rested steak also loses less onto the board when you cut it. If you cooked to the USDA minimum, wait at least three minutes before carving or eating. At our lower targets, resting still improves the texture.


Portioning, Serving, and Sourcing Wagyu

Japanese A5 is rich enough that we recommend thin slices and a small portion rather than a full steak on the plate. American Wagyu is usually less marbled and cut thicker, so it suits a standard steak presentation, though you should still judge the portion by the thickness and marbling of the cut and by your own appetite.
