Frequently Asked Questions

The essentials are a thermometer to track the long cook, something to shred with such as meat claws or heat-resistant gloves, and an injector if you want to season deep inside the shoulder. A sturdy tub or pan to pull the pork in keeps the mess contained. Those few items take you from raw shoulder to a tray of tender pulled pork.
Pork shoulder, often sold as a Boston butt, is the cut you want, since its fat and connective tissue break down into juicy, shreddable meat. Plan on roughly a third of a pound of finished pork per person, and remember a raw shoulder loses around 40 percent of its weight during the cook, so buy closer to a half pound or more of raw weight per guest.
Forks work, but they are slow and the metal heats up and bends. Meat claws grab a much larger area, let you shred a whole shoulder in a fraction of the time, and keep your hands farther from the heat. Insulated gloves are the other popular method, letting you pull the pork by hand for the texture you want. Either beats fighting a hot shoulder with two forks.
Pulled pork needs to cook well past the point where it is merely safe, into the 200 to 205 degree range, so the fat and collagen fully render. The real sign is feel: the bone wiggles free easily and a probe slides in with no resistance. If it is still firm or stringy, it needs more time, since shredding tender comes from patience, not the clock.
A rub alone makes excellent pulled pork by building bark and surface flavor. Injecting adds moisture and seasoning to the center of a thick shoulder, which helps on bigger cuts and during long cooks, and it is a favorite move for competition-style results. For a first cook, a good rub is plenty; add injecting once you want to push the flavor deeper.

With over 35 years of smoking experience, we started DDR BBQ Supply with a simple goal: to help others cook better barbecue. We've spent decades learning what works and what doesn't, and we apply that knowledge to every product we carry. From high-performance grills and smokers to carefully selected rubs, sauces, and tools, everything we offer is something we believe in and use ourselves. We don’t believe in cutting corners or selling gear we wouldn’t rely on during our own backyard cooks and when we compete in BBQ competitions.
