After that, insulated gloves for handling hot grates and big cuts, a water pan for moisture and steadier heat, and a good supply of wood chunks will take you most of the way. These few items turn guesswork into repeatable results.
A water pan acts as a heat sink that smooths out temperature swings and adds humidity to the chamber, which helps big cuts like pork shoulder and brisket stay moist through a long cook. It also catches drippings so they do not scorch on the firebox. Keep it topped up during the cook and you will notice steadier temps and a better bark.
Cooking directly over the fire is grilling, with intense heat right under the food. A heat deflector, or plate setter, blocks that direct heat so the chamber cooks with gentle indirect heat, which is exactly what ribs and pork shoulders need to render slowly without burning. Adding a deflector is what turns a kamado or kettle into a true smoker.
Thermometers, gloves, chips, chunks, and most cleaning tools are universal and work across any smoker.
