The best steak rubs are savory and pepper-forward with balanced salt and low sugar, so they build a steakhouse crust over high heat without burning. Coarse black pepper, garlic, and a little paprika are the backbone. Look for a medium grind that stands up to a hard sear, and keep the sugar minimal since steaks cook hot and fast.
They do different jobs. A rub builds a dry, seasoned crust and lets the beef flavor lead, which is ideal for quality cuts like ribeye and strip. A marinade adds moisture and flavor and can tenderize tougher, thinner cuts like flank and skirt. For a well-marbled steak, reach for a rub; for a lean, chewy cut, a marinade earns its place.
You have two good windows. Either season right before it hits the fire, or salt it well ahead, 40 minutes to a few hours, so the surface dries and seasons deeply for a better crust. What you want to avoid is salting 10 minutes out, which draws moisture to the surface and works against the sear. Right before or well ahead, not in between.

A very light coat of oil helps a rub adhere evenly and promotes browning, but it is optional since the meat's own surface moisture will hold most rubs. If you do oil, use just a thin film so you do not steam the crust. For a hard sear, patting the surface dry and seasoning is often all you need.
