The non-negotiables are a reliable thermometer to track the cook, a sharp slicing knife to serve it, and butcher paper or foil for the wrap. Add heat-resistant gloves for handling a heavy, hot cut and a sturdy cutting board with a juice groove, and you are equipped. Those few items cover trimming, cooking, and slicing a brisket properly.
Both push a brisket through the stall, but they behave differently. Foil traps the most moisture and speeds things up, though it can soften the bark. Butcher paper breathes a little, so it holds moisture while keeping the bark firmer, which is why many competition cooks prefer it. Choose foil for tenderness and speed, paper for a better balance of bark and moisture.
Brisket is not done at a fixed number; it is done when it feels right. That usually lands around 200 to 205 degrees internal, but the real test is when a probe slides into the thickest part of the flat with almost no resistance, like going into softened butter. Trust the feel over the clock, since every brisket finishes on its own schedule.
The two usual culprits are pulling it too early, before the connective tissue has rendered, or running out of patience during the stall and slicing before it has rested. Give it time to reach that probe-tender feel, then rest it wrapped for at least 30 to 60 minutes before slicing. Slicing against the grain at the end protects every bit of tenderness you worked for.
A general rub can work, but brisket rewards a beef-forward blend built around coarse black pepper and salt, with low sugar so it will not scorch over a long cook. That pepper-heavy profile is what builds the classic dark bark on a brisket. If you only buy one rub for beef, make it one designed with brisket in mind.
