A grill board is built for big, juicy proteins, so it is thicker and more stable, usually larger to fit a whole brisket, and ringed with a deep juice groove to catch the runoff instead of letting it spill onto the counter. Many add non-slip feet and handles. Those features handle hot-off-the-smoker meat in a way a small kitchen board simply cannot.
Wood boards are easier on knife edges and look beautiful enough to serve on, which is why end-grain boards are prized for carving. HDPE plastic boards are dishwasher safe, can be color-coded to keep raw and cooked separate, and are easy to sanitize, which makes them the practical choice for heavy prep and raw meat. A lot of cooks keep one of each and use them for different jobs.
End-grain boards are built so the knife slips between the wood fibers, which is gentler on your edge and lets the surface heal small cuts over time, making them the premium choice. Edge-grain boards are lighter and more affordable and still perform well for everyday use, they just show knife marks a bit more readily. For frequent carving, end-grain is worth the step up.
Hand wash it with mild soap and never soak it or run it through the dishwasher, since standing water and machine heat are what split wood. Dry it standing on edge so air reaches both faces, and rub in food-safe mineral oil every few weeks to keep the wood from drying out. Treated this way, a good board lasts for decades.
The easiest solution is to use disposable cutting boards.Or, use a separate board for raw meat and another for cooked food and produce, which is exactly why color-coded HDPE boards exist. Wash any board that touched raw meat in hot soapy water before it touches anything else, and replace plastic boards once they are deeply scarred, since grooves can trap bacteria. A second board is cheap insurance for your family's safety.
