A chimney starter is the go-to answer. You stuff newspaper or a fire starter cube underneath, fill the top with charcoal, light it, and in 15 to 20 minutes you have evenly lit coals with zero chemical taste. It is faster than fluid, safer, and it is the single accessory that most improves a charcoal cook's life.
Two levers do the work: the amount of lit charcoal and the air vents. More open vents mean more oxygen and a hotter fire, while closing them down lowers the heat. Building the coals on one side creates a hot zone and a cooler zone, so you can sear over the fire and finish gently beside it. A few cooks dialing in the vents and it becomes second nature.
A grill basket holds delicate or small foods like shrimp, vegetables, and wings so they do not fall through the grates, and it lets you flip everything at once. A smoker box holds wood chips that smolder for added flavor. They solve different problems, so plenty of charcoal cooks keep both on the shelf.
Kitchen mitts are not built for the radiant heat of live coals or for grabbing a hot chimney starter, and they offer no real grip. Dedicated high-temp BBQ gloves are rated for far more heat and give you the dexterity to move coals, lift grates, and handle food directly. Once you have worked a fire with proper gloves, the oven mitts stay in the kitchen for good.
Most charcoal accessories, like chimney starters, gloves, ash tools, and brushes, are universal and work across any live-fire cooker.
