Our Mahogany Fibrous Summer Sausage Casings 61mm are perfect for crafting summer sausage, semi-dry sausages, and cooked salamis. These fibrous casings are available in clear, mahogany, red, and protein-lined options.
Constructed with fibers running lengthwise, these casings are built strong—allowing them to be stuffed tighter without breaking. No need to use smoke; the mahogany color simulates a traditionally smoked appearance.

- Bundle of 10 casings
- Size: 61mm (2 3/8″) diameter x 24″ length
- Stuffing capacity per casing: approx. 2½ lbs.*
- Casings are open at both ends
- Shelf stable – no refrigeration required
- Pre-soak casings in warm water (~100°F) for 30 minutes prior to use
- Slide casing onto the largest stuffing tube available
- Use sausage stuffer to fill casing, leaving 2 inches unfilled at one end
- Close casing using 1/2″ hog rings and pliers or butcher’s twine
- Hang on smoke sticks or place on racks in smoker to begin thermal processing
