For everyday grilling, 16 to 18 inches keeps your hand a safe distance from the heat while staying easy to control. If you cook over a big offset, a deep pit, or a rotisserie, step up to 20 inches or more for extra reach. A shorter mini set is handy for plating and indoor use. Many cooks own two lengths for different jobs.
Good tongs grip without crushing, thanks to scalloped or lightly serrated tips, and they have balanced spring tension so your hand does not tire over a long cook. Solid one-piece stainless construction handles real heat and will not loosen at the hinge the way thin discount tongs do. Once you use a quality pair, the flimsy ones never come back out.
A locking mechanism is worth it purely for storage, since it keeps the tongs closed and out of the way in a drawer or on a hook. Silicone tips are gentler on nonstick griddles and cookware and tolerate heat well, but for direct grilling and moving coals, bare stainless tips take the abuse better. Pick based on where you cook most.
It is safer not to. Handling raw meat and then the finished food with the same tongs can transfer bacteria, so either keep a second pair for cooked food or wash the tongs thoroughly in between. It is the same logic as using separate cutting boards, and it is an easy habit that protects everyone at the table.
Most all-stainless tongs are dishwasher safe, though a quick hand wash is gentler on any locking spring and silicone tips. Rinse them while warm, lock them closed for storage, and check the hinge now and then. With almost no upkeep, a good pair of tongs lasts for many years of regular grilling.
