Jalapeno Summer Sausage Seasoning 2lbs 8oz is a flavorful blend of spices, mild jalapeno, and classic seasoning ingredients designed to enhance the natural richness of your meat without overwhelming it. It contains salt, corn syrup solids, jalapeno peppers, dextrose, whole mustard seed, corn starch, and natural spices.
This seasoning mix provides just enough jalapeno to add a gentle heat while still letting your venison or pork shine through. Ideal for hunters, sausage makers, or anyone wanting to try their hand at summer sausage at home.

10 lb Recipe Suggestion- 8 lbs. venison
- 2 lbs. pork trimmings
- 2 level tsp Insta Cure™ #1
- 7 oz. Jalapeno Summer Sausage Seasoning
- Use fibrous casings between 60–76 mm
Instructions: Grind venison through a 3/16″ plate and pork fat through a 3/4″ plate. Mix all meat and ingredients thoroughly. Stuff mixture into fibrous casings. Place in a smokehouse preheated to 120–130°F and apply heavy smoke for 3–4 hours. Raise smoker temp to 165°F and cook until internal temp reaches 152°F. After cooking, shower sausages with cold water until internal temp cools to 120°F. Refrigerate in a 45°F cooler for 24 hours before serving or packaging.
Does this seasoning contain jalapeno chunks?
Yes, it includes jalapeno pepper as part of the spice mix, but it's formulated for a mild kick—nothing overpowering.
How much meat can I process with one package?
This 2 lbs. 8 oz. package will season up to 50 lbs. of meat when used according to directions.
Do I need to use curing salt with this seasoning?
Yes, because the sausage is smoked, you’ll need to add Insta Cure™ #1 for safe curing.
