10 lb Bratwurst Sausage Recipe
  • 10 lbs. Pork Butts
  • 3 whole eggs
  • 1 pint fresh milk
  • 10 oz. Soy Protein Concentrate (2 cups, unpacked)
  • 4 oz. Bratwurst Seasoning

Grind pork through a 3/8" plate. Mix all ingredients thoroughly into meat until evenly blended. Stuff into 32–35 mm hog casings. Freeze any unused sausage.
